Abstract
O estudo de novas cultivares de batata (Solanum Tuberosum L.) é de grande importância para industria de processamento, tendo em vista a busca por variedades que atendam as principais exigências impostas pelas industrias de processamento, apresentando: formato, tamanho, ausência de disturbios fisiologicos e boa produtividade. Diante disso, este estudo visa: avaliar o potencial de 10 cultivares na indústria de processamento de batata pré-frita e avaliar a efetividade do branqueamento no escurecimento ezimático de 10 cultivares de batata. Os tubérculos das cultivares foram obtidos da área de produção comercial de Perdizes, Minas Gerais, Brasil. A cultivar Basin Russet apresentou menores valores de perda de massa acumulada (PMA), enquanto as cultivares Innovator e Umatilla Russet iniciaram a brotação mais tardiamente. No artigo I todas as cultivares visualmente foram classificadas na categoria 2 ou 3 (USDA), tendo a ‘Innovator’ mantida na categoria 2 durante os 180 dias de armazenamento. Já no artigo II as cultivares pertencentes ao gupo 3 e 4 não apresentaram escurecimento enzimático, observou-se coloração mais clara dos palitos oque corrobora com a baixa atividade da polifenoloxidase(PPO) e peroxidase(POD) e maior L*. No artigo II o uso do branqueamento foi mais efetivo nos grupos 1 e 2 onde observou-se uma melhora da coloração dos palitos. Dessa forma, as principais cultivares indicadas para a indústria de processamento de batata são: Innovator, Alverstone Russet e Basin Russet, pois, tanto no artigo I quanto no II apresentaram resultados relevantes para industria de processamento. The study of new potato cultivars (Solanum Tuberosum L.) is of great importance for the processing industry, in view of the search for varieties that meet the main requirements imposed by the processing industries, presenting: shape, size, absence of physiological disorders and good productivity. Therefore, this study aims to: evaluate the potential of 10 cultivars in the pre-fried potato processing industry and evaluate the effectiveness of blanching in the ezymatic browning of 10 potato cultivars. The tubers of the cultivars were obtained from the commercial production area of Perdizes, Minas Gerais, Brazil. The Basin Russet cultivar showed lower accumulated mass loss (PMA) values, while the Innovator and Umatilla Russet cultivars started sprouting later. In article I, all cultivars were visually classified in category 2 or 3 (USDA), with ‘Innovator’ remaining in category 2 during the 180 days of storage. In article II, the cultivars belonging to groups 3 and 4 did not show enzymatic darkening, a lighter color of the sticks was observed, which corroborates the low activity of polyphenol oxidase (PPO) and peroxidase (POD) and higher L*. In article II, the use of bleaching was more effective in groups 1 and 2 where an improvement in the color of the sticks was observed. Therefore, the main cultivars recommended for the potato processing industry are: Innovator, Alverstone Russet and Basin Russet, as both articles I and II presented relevant results for the processing industry.
