Abstract
O açaí é um alimento fundamental na cultura paraense. Ocorre que grande parte da população tem encontrado dificuldades de acesso ao mesmo. Portanto, o objetivo desta pesquisa foi investigar de que forma os problemas de acesso ao açaí, enquanto alimento simbólico da dieta, podem afetar a prevalência de Segurança Alimentar e Nutricional (SAN) no Pará. Além disso, também objetivou-se identificar o perfil do consumidor de açai no estado, verificando Os possíveis processos de transformação e resistência dos hábitos alimentares tradicionais. E por fim, analisar a relação entre a cultura alimentar e a SAN para a população estudada. Para isso, foram realizadas duas formas de coleta de dados: quantitativos, através da aplicação de um questionário eletrônico; e dados empíricos com recursos metodológicos qualitativos como entrevistas e observação participante. Conforme as informações obtidas, as práticas que envolvem o hábito de tomar açai ainda são expressivas contribuindo pra manutenção da cultura alimentar local. Foram reforçadas as particularidades que configuram a diferenciação no modo de “tomar” açaí no Pará. As principais transformações estão relacionadas a redução do consumo da bebida em termos de quantidade e frequência, sendo que o aumento do preço, principalmente na época da entressafra, foi um dos principais fatores para esta diminuição. Na tentativa de garantir a açai diário, os consumidores estão praticando estratégias que colocam em risco sua saúde. Portanto, conclui-se que o menor acesso ao açai em quantidade e qualidade insatisfatória é uma forma de privação e desrespeito aos hábitos tradicionais. A prevalência de SAN no Pará deve promover ações de sustentabilidade cultural garantindo o acesso ao açaí. Para alcançar medidas plausíveis são necessárias mudanças nos paradigmas metodológicos de avaliação de SAN, bem como a gestão intersetorial e transdisciplinar de forma que atendam às necessidades da sociedade paraense com um todo, conciliando interesses comerciais e culturais, para incorporar todas as dimensões propostas em SAN. Therefore, the aim of this research was to investigate how acai access problems, as a symbolic food of the diet, can affect the prevalence of Food and Nutrition Security (FNS) in Para. In addition, the objective was to identify the profile of acai consumer in the state, checking the possible processes of transformation and resistance of traditional food habits. And finally, to analyze the relationship between food culture and FNS for the studied population. To achieve these proposals, two forms of data collection were performed: quantitative, through the application of an electronic questionnaire; and empirical data with qualitative methodological resources such as interviews and participant observation. According to the information obtained, the maintenance of acai-eating habits is quite expressive. With particularities and differentiation Processes that configure the essence in the way to “drink” açai in Pará. The main transformations are related to the reduction of the quantity and frequency of consumption, and price was the factor with the greatest weight. And with that, many consumers, especially in the urban area of the state, assume resistance strategies that endanger their health. Whereas, altering the forms of consumption by offering the drink in unsatisfactory quantity and quality is a way of deprivation and disrespect for traditional habits. These cultural aspects are explicit in the concept of SAN. Therefore, it is concluded that without actions that promote cultural Sustainability ensuring access to acai, there can be no prevalence of FNS in Para. To reach plausible measures, changes in the methodological paradigms of FNS assessment are required, as well as intersectoral and transdisciplinary management in a way that meets the needs of Pará society as a whole, reconciling commercial and cultural interests, to incorporate all dimensions proposed in FNS.
