Abstract
O objetivo deste ensaio foi avaliar os efeitos das embalagens, do ambiente e do tempo de armazenamento no crescimento microbiológico e na concentração de tanino em S. trilobata. Foram utilizadas embalagens de vidro, polipropileno e papel metalizado. Foi usado o esquema de parcelas subdivididas em delineamento inteiramente ao acaso. Nas parcelas, ficaram as épocas de avaliações, e nas subparcelas, os tipos de embalagens, com três repetições. Nas análises microbiológicas foi utilizada a metodologia proposta pelo Ministério da Agricultura, isto é, o produto seco e moído, preparado a partir de folhas de Sphagneticola trilobata, foi acondicionado em embalagens de papel metalizado e armazenado sob refrigeração (5°C). Nessas condições houve a preservação da cor do produto, o percentual de umidade foi menor, a concentração de tanino foi maior, e as contagens médias de fungos filamentosos e leveduras, mesófilos aeróbios e Staphylococcus aureus estavam dentro de níveis aceitáveis. No entanto, deve-se preocupar com as condições higiênicas do produto seco e moído, já que a contagem de coliformes totais foi elevada.
The objective of this assay was to evaluate the effects of packaging, environment and storage time on the microbiological growth and tannin concentration in S. trilobata. Glass, polypropylene and metallic paper packagings were used. A completely randomized design with 3 replications and split-plot scheme was used. The plots included the evaluation times and the split-plots the types of packaging. The methodology proposed by the Ministry of Agriculture was applied for the microbiological analyses. The dried and ground product, prepared from Sphagnetícola trilobata leaves, was stored under refri geration (SºC) and withmetallic paper packaging. Under these conditions, product color was preserved, moisture percent was lower, tannin concentration was higher and the medium countings of filamentous fungi and yeasts, aerobic mesophyles and Staphylococcus aureus were found to be within acceptable values. However, care should be devoted to the sanitary conditions of the dried and ground product, since total coliform counting was high.
