Filmes e revestimentos comestíveis são desenvolvidos para interagir favoravelmente com os alimentos, aumentando sua vida de prateleira. Eles têm potencial para reduzir o uso de polímeros sintéticos tradicionais e melhorar a qualidade dos alimentos, controlando a transferência de massa, carreando ingredientes e melhorando a integridade mecânica e as características dos alimentos. Este trabalho discute o uso de filmes e revestimentos comestíveis em alimentos e sumariza as principais pesquisas sobre sua eficácia e seus problemas.
Edible films and coatings from biopolymers have been developed to be used as protective layers and to interact favorably with food products increasing their shelf life.They have the potential to reduce the use oftraditional polymeric packaging, and to improve food quality by providing a barrier te mass transfer, carrying food ingredients and/or improving the mechanical integrity or handling characteristics of foods. This review discusses the use of edible films and coatings in food and summarizes research findings on its effectiveness and problems.
