Título: Influência da temperatura do ar de secagem e da fragmentação dos frutos no rendimento de óleo essencial de pimenta-rosa
Influence of drying air temperature and fruit fragmentation on yield of essential oil of pink pepper

Abstract: O uso de plantas medicinais para o tratamento de enfermidades é feito desde a antiguidade. Uma planta nativa brasileira usada para este fim é a Schinus terebinthifolius. Dos seus frutos, conhecidos como pimenta-rosa, é possível extrair o óleo essencial. O rendimento de óleo essencial pode ser afetado por diversos fatores e processos pós-colheita, dentre eles a secagem. Este processo é importante para garantir o armazenamento seguro, uma vez que o teor de água é reduzido. No entanto, a secagem é um processo complexo que pode provocar danos e consequente perda na qualidade dos produtos. Outro fator que interfere no rendimento é a fragmentação do material, devido ao rompimento de estruturas. Neste contexto, o objetivo deste trabalho foi avaliar a influência da temperatura do ar de secagem e da fragmentação dos frutos no rendimento do óleo essencial de pimenta-rosa, bem como ajustar e modelar estatisticamente modelos matemáticos às curvas de secagem dos frutos. Foram submetidas à secagem, 350 g de pimenta-rosa, nas temperaturas de 50, 60 e 70 °C em três repetições até atingir teor de água de 0,11 b.s.. Para fins de modelagem matemática, 90 g de frutos permaneceram no secador até atingirem o teor de água do equilíbrio. Aos dados experimentais foram ajustados doze modelos matemáticos usando regressão não- linear pelo método Quasi-Newton. O ajuste dos modelos foi analisado pelo coeficiente de determinação, erro médio relativo, erro médio estimado e distribuição de resíduos. Após a secagem, os frutos foram submetidos à extração de óleo essencial. Para avaliar a influência da fragmentação no rendimento, a extração foi realizada com 100 g de frutos inteiros e com 40 g de frutos triturados em moinho de facas. A extração de óleo essencial foi feita por três horas por meio de hidrodestilação. Os dados de rendimento foram analisados através de regressão e teste de Tukey a 5% de significância. Conclui- se que o maior rendimento de óleo essencial de pimenta-rosa foi obtido a partir de frutos que foram secos a 50 °C e triturados antes da extração e o modelo de Midilli se ajustou satisfatoriamente aos dados de secagem para todas as temperaturas estudadas.
The use of medicinal plants for the treatment of diseases has been done since antiquity. Schinus terebinthifolius is a Brazilian native plant used for this purpose. From its fruits, known as pink pepper, it is possible to extract the essential oil. The yield of essential oil can be affected by several factors and post-harvest processes, among them the drying. This process is important to ensure safe storage as the water content is reduced. However, drying is a complex process that can cause damage and consequent loss in product quality. Another factor that interferes in the yield is the fragmentation of the material, due to the rupture of structures. In this context, the objective of this work was to evaluate the influence of drying air temperature and fruit fragmentation on the yield of the essential oil of pink pepper, as well as to adjust and statistically model mathematical models to the drying curves of the fruits. About 350 g of pink pepper were dried at temperatures of 50, 60 and 70 ° C in three replicates until reaching a water content of 0.11 b.s.. For mathematical modeling, 90 g of fruits remained in the dryer until reach the equilibrium water content. Twelve mathematical models were adjusted to the experimental data using nonlinear regression by the method Quasi-Newton. The fit of the models was analyzed by the coefficient of determination, relative mean error, estimated mean error and distribution of residues. After drying, the fruits were submitted to the extraction of essential oil. To evaluate the influence of the fragmentation on the yield the extraction was carried out with 100 g of whole fruits and with 40 g of ground fruits in a knife mill. The extraction of essential oil was carried out for three hours by hydrodistillation. The yield data were analyzed through regression and Tukey test at 5% significance. It was concluded that the highest yield of essential oil of pink pepper was obtained from fruits that were dried at 50 ° C and ground before extraction and the Midilli model satisfactorily adjusted to the drying data for all temperatures studied.
