Título: Análise da variabilidade espacial da qualidade do café cereja produzido em região de montanha
Spatial variability analyses of the coffee cherry produced in mountainous region

Abstract: A qualidade do café é resultado da interação entre a cultura, meio ambiente e tratos culturais, criando um elevado número de fatores que, aliados a variabilidade espacial da produção e qualidade, dificultam sua otimização. A agricultura de precisão, com o manejo localizado desses fatores segundo sua variabilidade, pode trazer grandes benefícios à cafeicultura, tornando-a mais sustentável e lucrativa. O presente trabalho teve como objetivos: identificar a variabilidade espacial da qualidade do café de montanha colhido no estádio cereja, gerando um mapa temático dos níveis de qualidade obtidos; correlacionar as notas e critérios de qualidade de bebida com o teor de açúcares dos frutos e grãos, nitrogênio e potássio dos grãos e estado nutricional das plantas; e identificar a influência da orientação da face de exposição ao sol dos talhões sobre a qualidade de bebida do café. O trabalho foi desenvolvido durante a safra 2003/4, no Departamento de Engenharia Agrícola da Universidade Federal de Viçosa e na Fazenda Braúna, situada no município de Araponga, MG, e constou de três etapas. Na primeira, analisou-se o efeito da face de exposição das plantas de café ao sol sobre a produção, maturação e qualidade de bebida. Selecionou-se um talhão homogêneo utilizando o delineamento inteiramente casualizado, foram amostrados aleatoriamente 36 grupos, formados por quatro plantas, sendo que de cada um deles foram coletadas duas amostras de frutos, uma para cada face de exposição em relação às linhas de plantio. As amostras foram pesadas e classificadas quanto ao estádio de maturação, sendo os frutos cereja submetidos às análises de qualidade. Utilizou-se o teste t para dados pareados a fim de verificar a ocorrência de diferença estatística entre os tratamentos. Na segunda etapa, estudou-se o efeito da orientação da face de exposição ao sol de parcelas de plantas de café na qualidade de bebida dos frutos cereja. Demarcaram-se quatorze parcelas homogêneas, que foram classificadas segundo a orientação de suas faces de exposição ao sol. Em cada parcela foi coletada uma amostra composta de frutos cereja, das quais foram analisados os critérios de qualidade de bebida, brix, N, K e açúcares dos grãos. Os valores obtidos foram submetidos à análise de variância, segundo o delineamento inteiramente casualizado e ao teste de Tukey. Foi, também, realizada a análise de correlação entre os parâmetros estudados. Na terceira etapa, investigou-se a variabilidade espacial da qualidade do café cereja, cultivado em região de montanha, identificando-se os talhões quanto às características culturais e faces de exposição ao sol. A partir da amostra de cada talhão, foram realizadas as análises da qualidade de bebida e grau brix dos frutos. Utilizando-se estatística, descritiva analisou-se o efeito da densidade de plantio, face de exposição dos subtalhões e idade das plantas sobre as notas de qualidade. Gerou-se um mapa temático dos níveis de qualidade nos subtalhões, bem como procedeu-se à correlação entre as notas de qualidade de bebida, seus critérios, grau brix e o índice de balanço nutricional médio (IBNm). Concluiu-se que: a face de exposição das plantas, submetida a uma maior exposição ao sol, apresentou produção e qualidade de bebida superior à face sombreada; sendo que o mesmo efeito não foi verificado para a maioria das classes de maturação e os valores médios de brix. Detectou-se correlação significativa de qualidade de bebida com o teor de potássio dos grãos. O brix dos frutos apresentou correlação significativa com os critérios de qualidade aroma e balanço. Com exceção para o IBNm, nenhum outro fator ou critério de qualidade apresentou diferença significativa para a orientação da face de exposição das parcelas. A densidade de plantio, face de exposição dos subtalhões e idade das plantas não influenciaram as notas de qualidade. Houve variabilidade das notas de qualidade de bebida entre os subtalhões, que variaram de um mínimo de 70 a um máximo de 85, com uma média de 77.
The coffee quality results from the interaction of the crop with the environment and cultural treatments, generating a high number of factors that associated to the spatial variability of the production and quality can hamper its optimization. With the site-specific management of these factors according to their variability, the precision agriculture can provide great benefits to coffee crop as making it more sustainable and lucrative. The objectives of this research were: to identify the spatial variability in quality of the mountain- produced coffee harvested at the coffee cherry stage; to generate a thematic map of the obtained quality levels; to correlate the notes and the beverage quality criteria to the contents of sugar in the coffee cherries and beans, nitrogen and potassium in the beans, and the nutritional state of the plants; and to study the influence from the orientation of the stand faces exposed to the sun upon the quality of the coffee beverage. The study consisted of three stages and was carried out during the harvest 2003/4 in the UFV Agricultural Engineering Department as well as in Braúna farm, which is located in Araponga county – MG. At the first stage, the effect of the sun-exposed faces upon the yield, maturation and beverage quality were analyzed. A homogeneous stand was selected, and the entirely randomized design was used. A total of 36 groups consisting of four plants each one were randomly sampled, and two coffee cherry samples were collected from each one, being one sample for each sun-exposed face in relation to the planting rows. The samples were weighed and classified according to their maturation stage, whereas the coffee cherries were submitted to quality analyses. The t-test was used for the paired data in order to verify the occurrence of statistical differences among the treatments. At the second stage, the effect from the orientation of the sun-exposed face of the coffee plant plots upon the quality of the coffee cherry beverage was studied. Fourteen homogenous plots were demarcated and classified according to the orientation of their sun-exposure faces. In each plot, a sample composed by coffee cherries was collected, in which the criteria of beverage quality, brix, N, K and sugars of the beans were analyzed. The obtained values were subjected to the variance analysis, according to the entirely randomized design and to the Tukey test. The correlation analysis among the studied parameters were also accomplished. At the third stage, the space variability of the quality of the coffee cherries cropped in mountainous region were investigated, by identifying the stands for the crop characteristics and sun-exposure faces. From each stand sample, the analyses of the beverage quality and brix of the coffee cherries were accomplished. The effects of the planting density, stand exposure faces, and plant age upon the quality notes were analyzed by descriptive statistics. A thematic map of the quality levels in the stands was generated, as well as the correlation among the notes of the beverage quality, their criteria, the brix and the average nutritional balance index (IBNm). The following conclusions may be drawn: the plant sun- exposed face submitted to a higher exposure to the sun showed a superior yield and beverage quality, relative to the shaded face; however this effect was not found for most maturation classes neither for the average brix values. A significant correlation was found between the beverage quality and the potassium content in the beans. The brix of the coffee cherry presented significant correlation with the aroma and balance criteria. Except for IBNm, any other factor or quality criterion showed significant differences for the orientation of the plot exposure faces. The planting density, stand exposure faces and plant ages had no effect upon the quality notes. The notes for beverage quality varied among the coffee stands. These notes varied from a minimum of 70 to a maximum of 85, so averaging 77.
