Abstract: Acompanhou-se o crescimento de tourinhos de corte a pasto, da fase de amamentação à terminação, recebendo diferentes estratégias de suplementação. Os objetivos foram avaliar as condições nutricionais dos animais em cada fase de vida ou época do ano, e avaliar e comparar o crescimento do corpo como um todo, de medidas biométricas (BM) e dos componentes corporais, bem como estimar as exigências nutricionais para ganho de peso. Foram utilizados 57 bezerros nelorados com idade e peso vivo iniciais de 144 d e 129 kg, respectivamente. Cinco animais foram abatidos no início do experimento e os demais divididos em quatro grupos, alojados em pastagens de Brachiaria decumbens Stapf e suplementados com concentrados com diferentes perfis protéicos ou sal mineral ad libtum (controle). Estes animais foram abatidos escalonadamente 120 d, 210 d, 315 d e 434 d após o início do experimento. Os animais designados para cada tratamento de suplementação concentrada, nomeados como T1, T2 e T3, permaneciam no mesmo tratamento até seu abate, assim como os animais designados ao grupo controle. Na fase de amamentação, durante o período de transição águas-seca, variou-se o nível de proteína nos suplementos concentrados. Nesta fase, os animais foram alojados nos pastos juntamente com suas mães e receberam o suplemento em um sistema de creep-feeding. Nas demais fases (recria no período seco, recria na transição seca-águas e terminação nas águas), manteve-se o nível de proteína em todos os suplementos concentrados (suplementos isoprotéicos) e variou-se o teor de nitrogênio não protéico (NNP) nesta proteína. Em cada fase, após 45 dias do início da fase, realizou-se uma avaliação nutricional dos animais, que incluiu a estimação de consumo e digestão de nutrientes e de características do metabolismo protéico. Para a estimação do consumo e digestibilidade, utilizaram-se os indicadores: LIPE®, dióxido de titânio e fibra em detergente neutro indigestível. Realizou-se ainda coleta de amostras de urina e de sangue. O efeito de suplementação, e os efeitos linear e quadrático do nível de proteína no concentrado foram avaliados pela decomposição da soma de quadrados em contrastes ortogonais, adotando-se α = 0,10. Na fase de amamentação o consumo de concentrado pelos bezerros substituiu parte do pasto ingerido pelos bezerros, o que melhorou a digestibilidade da dieta, da mesma forma que o aumento do nível de proteína neste concentrado. Durante a recria, no período da seca e da transição seca águas, o consumo de concentrado reduziu a ingestão de pasto, e incrementou os aspectos nutricionais avaliados, incluindo os coeficientes de digestibilidade e o teor de NDT. Na transição seca-águas, altos níveis de NNP neste concentrado prejudicou o aproveitamento metabólico da proteína da dieta, o que aponta para a necessidade de se equilibrar os teores de NNP do suplemento e do pasto. No período seco, o consumo de concentrado melhorou ainda a produção e a eficiência de síntese de proteína microbiana. Na fase de terminação durante o período daságuas, além de reduzir o consumo de pasto, o consumo de concentrado reduziu também a eficiência de síntese de N microbiano. O nível de NNP no suplemento também reduziu a produção e eficiência de síntese de N microbiano. Os resultados mostraram que, nesta fase do ano, o tipo de proteína no suplemento deve ser avaliado considerando-se a velocidade de degradação da proteína disponível no pasto. Foram avaliados cinco modelos matemáticos para descrever o crescimento animal: Multifásico, Linear, Logarítmico, Gompertz e Logístico. O modelo multifásico mostrou-se mais eficiente que os demais em todos os aspectos da descrição do crescimento de bovinos de corte a pasto. O peso corporal sem jejum (PC) e as BM foram tomados a cada 28 dias. As BM incluíram abertura de íleos (HW), de ísquios (PW), comprimento de garupa (PGL), altura de garupa (RuH), largura de abdômen (AW), comprimento corporal (BL), altura de cernelha (HeW) e comprimento de costelas (RiD). Estimou-se a primeira e segunda variáveis canônicas para cada fase e para o período experimental como um todo, utilizando-se todas as BM. Ajustou-se um modelo de crescimento multifásico, considerando-se três fases de produção, para o PC e cada BM. Equações baseadas em um modelo logístico foram também ajustadas para as BM. Compararam-se os modelos de crescimento entre os tratamentos que recebiam concentrados e entre estes e o controle (efeito da suplementação). As principais BM a explicar as diferenças entre a forma do corpo dos animais variaram de acordo com a fase de vida dos animais. Na fase de amamentação, os tratamentos não foram capazes de afetar a forma do corpo dos animais. Nas demais fases, as alterações na forma dos animais são compatíveis com um menor tamanho adulto dos animais controle. A curva de crescimento dos animais controle foi afetada principalmente pela época de baixa produção forrageira do ano. Em cada abate, as meia carcaças foram resfriadas, pesadas, e a meia carcaça direita foi dissecada e seus componentes (músculos, gordura subcutânea, gordura intermuscular, ossos longos, ossos da costela, e ossos das vértebras) pesados. O dianteiro e o traseiro da meia carcaça esquerda foram pesados e desossados, procedendo-se à pesagem dos cortes comerciais: Paleta, Acém, Maçã de Peito, Chã de Dentro, Chã de Fora, Alcatra, Filé Mignon, Fraldinha, Lagarto, Picanha, Costela e Contra-Filé. O PCVZ e o ganho de PCVZ, bem como suas composições químicas foram estimados. Estimou-se a primeira e segunda variáveis canônicas utilizando-se os dados dos componentes da carcaça, e dos cortes comerciais. Ajustou-se também um modelo de crescimento multifásico, considerando-se três fases de produção, para a carcaça e cada componente; para o dianteiro, o traseiro e os cortes comerciais; e para os tecidos adiposos, o conteúdo corporal de proteína e de energia, e as relações entre PCVZ e PV, e entre o tecido adiposo da carcaça e o tecido adiposo total. Compararam-se os modelos de crescimento entre os tratamentos que recebiam concentrados e entre estes e o controle (efeito da suplementação). Estimaram-se as exigências nutricionais de proteína e energia para ganho. O efeito do período de baixa disponibilidade nutricional anual sobre a curva de crescimento dos tecidos da carcaça foi mais pronunciado nos animais que não receberam suplementação concentrada e não foi afetado pelo perfil protéico do programa de suplementação. O tecido da carcaça mais susceptível às variações nutricionais foi a gordura subcutânea, e o mais resistente os ossos das vértebras. Os cortes mais sensíveis às variações nutricionais durante o ano foram o Contra-Filé e a Picanha, e os mais resistentes, o Filé e as Costelas. O fornecimento de concentrado e a presença de uréia interferiram no crescimento dos cortes cárneos, especialmente durante a fase de restrição nutricional. Para a conversão do PV em PCVZ em animais a pasto deve-se utilizar dados obtidos em situação de pastagem e suplementação semelhantes. O tecido adiposo da carcaça é de mobilização prioritária. A curva de crescimento dos tecidos adiposos é influenciada pelo fornecimento de concentrado, mas não pelo perfil protéico deste. A participação da energia da proteína na energia retida total reduz-se e a proteína retida no ganho aumenta à medida que aumenta a concentração energética do ganho nas condições aqui avaliadas. Na véspera dos abates mediram-se as BM e o peso corporal em jejum (SBW). Coletaram-se ainda, no abate, os dados de gordura interna, volume e área corporais, peso e composição da seção da 9ª e 11ª costelas e espessura de gordura, que foram utilizados juntamente aos dados de gordura da carcaça e do corpo vazio para se estudar as relações entre BM e os componentes corporais. Equações de predição da área e do volume corporal, da gordura subcutânea, da carcaça e do corpo foram ajustadas. O primeiro sistema para predizer a gordura física e química da carcaça e do corpo vazio foi elaborado utilizando-se informações in vivo, e o segundo sistema usou o PC e o peso da gordura da seção da 9ª à 11ª costela. A combinação de BM, PC e características da carcaça foram precisas e acuradas em predizer a composição de gordura da carcaça e do corpo dos animais. O uso de BM pode melhorar a acurácia e a precisão das predições da composição corporal de animais a pasto.
The growth of grazing young bulls from the nursing to the finishing phase, receiving different supplementation strategies, was evaluated. The objectives were to evaluate the nutritional status of the animals in each phase of their life or season of the year, to compare the growth of the whole body of the biometrical measurements (BM) and of the body components, and to evaluate nutritional requirements to weight gain. Fifty seven Nellore crossbreed young bulls with initial age and live weight of 144 d and 129 kg were used. Five animals were slaughtered at the beginning of the experiment and the others were divided into four groups, housed in Brachiaria decumbens Stapf pastures and supplemented with concentrate with different protein profiles or ad libtum mineral supplement (control). These animals were slaughtered scaling 120, 210, 315 and 434 d after the beginning of the trial. Animals assigned to a concentrate supplementation treatment, named as T1, T2 and T3, remained in the same treatment until slaughter, as the control animals. In the nursing phase, during the transition of rainy to dry season, the levels of protein in the concentrate supplements varied. In this phase, cows and calves were housed in paddocks and calves received the supplement in a "creep-feeding" system. In other phases (growing in dry season and in transition dry to rain season, and finishing phase in rain season), the same protein level was maintained (isoprotéicos supplements) and the non-protein nitrogen (NPN) content was varied. In each phase, after 45 d, the nutritional evaluation of animals, which included the estimate of intake and digestion of nutrients and characteristics of protein metabolism, was made. The estimate of intake and digestibility used the indicators: LIPE®, titanium dioxide and indigestible neutral detergent fiber. Urine and blood samples were collected too. The supplementation effect and the linear and quadratic effects of the level of protein in the concentrate were evaluated by the decomposition of the sum of squares into orthogonal contrasts, adopting α = 0.10. In the nursing phase, the concentrate intake by the calves replaced part of the pasture ingested by the calves, which improved the digestibility of the diet, as the level of protein on the concentrate. During the growing phase, in the dry and in the transition of the dry season to the rainy season, the concentrate intake reduced the intake of pasture, and increased the nutritional aspects evaluated, including the digestibility and the TDN content of the diet. In the transition of the dry season to the rainy season, high NPN content of the concentrate decreased the metabolic use of the protein of the diet. It pointed out the need of a balance between the NPN of the supplement and the pasture. In the dry season, the concentrate intake increased the production and efficiency of microbial protein synthesis. In the finishing phase, during the rainy season, the concentrate intake reduced the intake of pasture, and the efficiency of microbial protein synthesis. The NPN level in the concentrate also reduced the production and efficiency of microbial protein synthesis. The results showed that, in this season, the protein pattern in the supplement should be evaluated considering the speed of degradation of it and of the protein available in the pasture. Five mathematical models to descript the growth of the animals were evaluated: Multi-phase, Linear, Logarithm, Gompertz, and Logistic. The Multi-phase model was more efficient than the others in all aspects to describe the growth of grazing beef cattle. The full body weight (FBW) and the BM were taken each 28 d. The BM included hooks width (HW), pins width (PW), pelvic girdle length (PGL), rump height (RuH), abdomen width (AW), body length (BL), height at withers (HeW) and rib depth (RiD). It was estimated the first and the second canonical variables for each phase and for the entire experimental period using all BM. A growth multi-phase model with three phases was adjusted for the FBW and each BM. Equations based on a logistic model were also adjusted for each BM. Growth models were compared between the treatments that received concentrate and between these and the control (supplementation effect). The main BM to explain the differences between animal's body shapes varied according to the life phase of the animals. The treatments were not able to change animal's body shapes in the nursing phase. On the other phases, the changes in animal s body shapes were compatible with the small mature size of the control animals. The growth curves of the whole body of the control animals were mainly affected by the low forage production season of the year. At the slaughter, the half carcasses were chilled, weighed, and the right half carcass was dissected and its components (muscles, subcutaneous fat, intermuscular fat, long bones, rib bones, and vertebra bones) were weighed. The frontquarters, the hindquarters, and the commercial cuts (blade, chuck, brisket, top side, outside round, sirloin, tenderloin, flap, eyeround, tri tip, short ribs and striploin) were weighed. The empty body weight (EBW) and the empty body gain (EBG) and their chemical compositions were estimated. The first and the second canonical variables were estimated using the data of the carcass and it components, and of the commercial cuts. A multi-phase growth model was adjusted, considering three production phases, to the carcass and it components, the frontquarters, the hindquarter, and the commercial cuts; and to the adipose tissues, the protein and energy body content, and to the relationship between EBW and BW, and between the carcass adipose tissue and the total adipose tissue. Growth models were compared between the treatments that received concentrate and between these and the control (supplementation effect). The nutritional requirements of protein and energy to gain were estimated. The effect of the annual period of low nutritional availability over the growth curve of the carcass tissues were more pronounced in animals receiving no concentrate supplement, and was not affected by the protein profile of the concentrate. The carcass tissue more affected by the seasonal nutritional variations was the subcutaneous fat, and the most resistant was the vertebrae bones. The most sensitive cuts to the annual nutritional variations were the striploin and the tri tip, and the most resistant ones, the tenderloin and the short ribs .The concentrate intake and the use of urea interfered with the growth of the meat cuts, especially during the nutritional restriction phase. To convert BW in EBW in grazing animals, data from grazing animals with similar supplementation should be used. Adipose carcass tissue is the priority for mobilization. The growing curve of the adipose tissue is affected by the concentrate supply, but not by its protein profile. The participation of the protein energy in the total retained energy reduces, and the protein retained on the gain increases as the energetic concentration of the gain increases in the conditions here evaluated. In the day before the harvest, the BM and the shrunk body weight were obtained. Other measurements, including internal fats, body volume, body area, 9 to 11th rib section weight and composition, and fat thickness, were used with the data of carcass and empty body fat to evaluate the relationships between BM and body components. Equations to predict body area, body volume, subcutaneous fat, and carcass and body fat were developed. The first system used to predict carcass and empty body physical and chemical fat was devised using in vivo information whereas the second system used BW and the 9 to 11th rib fat weight. The combination of BW, carcass traits, and BM was precise and accurate in estimating carcass and body fa composition. The use of BM can improve the accuracy and precision of the predictions of body composition of grazing animals.
